AC Odyssey “New Game +”, what’s carried over?

Surely this has been asked millions of times, but I din't exactly find what I was looking for. So:

Starting a new game +, what's being carried over?

Of course, the stats. And as far as I understand the items bought at the store as well as the items redeemed at Bethesda.

But what about the lvl? Do I start with the last lvl in the previous game or at 1 again? And will the achievements collected so far be taken to the new game (e.g. the earned engravings by using specific weapons or killing specific enemies)? And what about the mastery levels? Are you able to acces them from the beginning with the new game +? What about the already collected legendary items (epsecially Poseidon's Trident)?

And something important, too: What about the Mercenary Tier? 😉

I know, it's a fucking amount of questions I'm bringing in. But I want to be sure before starting anew.
